Research Interests

Solving the expensive problems that occur between the field and the fryer

I study in maximizing the value of every acre through postharvest science. I work directly with potato growers and processors to solve high stakes issues like pressure bruise management, sprout inhibition, and French fry texture optimization. My lab at CSU contributed to the development of nearly 20 new cultivars, including the recent Crystal and Horizon Russets. I’ve secured over $3 million in funding to develop real-world solutions from molecular docking for new sprout inhibitors to warehouse management to reduce tubers cutting black. I understand how to bridge the gap between breeding and the fryer to ensure a consistent, high-quality raw product year-round.
